According to a recent study by the Harvard School of Public Health, the ingestion of red meat can cause a 13% greater chance of premature death. Now with that in mind, consumers may feel at ease shifting their meat focus to seafoods like salmon, which can be one of the healthiest types of fish for consumption. But not all salmon are created equal. Yes, created (housed in controlled farms across the country). Majority of the salmon Americans consume are farm raised, grown in pens near the ocean. Public attention has focused on aquacultural operations that are environmentally inefficient, but there is a new salmon farm that is seeking more sustainable ways to raise their salmon. It is endorsed by L.A. chefs like Mezze’s Micah Wexler, Little Dom’s and Dominick’s Brandon Boudet, and Drago Centro‘s Ian Gresik. Skuna Bay was launched in Los Angeles this past November. Join Drago Centro in downtown Los Angeles as they welcome certified Level 2 Court of Master Sommeliers, Spencer Cruse to the team as the new Beverage Director and Sommelier. Adding to the already extensive wine list at Drago Centro, Cruse is introducing more approachable wines to pair with Chef Ian Gresik‘s menu. Get a lesson in pasta with Drago Centro’s chef Ian Gresik

Want to learn how to create the perfect pasta from scratch? For two nights in January, Executive Chef Ian Gresik of Drago Centro in downtown Los Angeles will be teaching a class to those with a culinary curiosity on pasta. Chef Ian is no stranger to playing with dough as he started his professional career at Patina Restaurant as a pastry chef.

Attendees will be served in The Vault in Drago Centro with personalized pasta tasting and a beverage. Classes are $55 per person and kicks off Wednesday, January 18 at 5 PM. La Festa dei Sette Pesci: the Feast of Seven Fishes, a southern Italian tradition

La Festa dei Sette Pesci is a tradition originating from Southern Italy that’s celebrated on Christmas Eve in observance of the birth of Baby Jesus through a feast of seven fishes. The fish-centered meal comes from the Roman Catholic tradition of abstinence. Fish counts have been known to go up to nine different varieties.
