Join Locanda Del Lago in Santa Monica for another installment of “Morso della Bestia”, Bite of the Beast, focusing on capon – a fattened rooster on Thursday, April 26 at 7 PM. Executive Chef Gianfranco Minuz will be showcasing this free-range, hormone-free poultry along side produce of the Santa Monica Farmers’ Market in his five course menu. Antipasto: Chilled Capon Breast Roulade with spiced fruit mustard, baby frisée, and mustard seed dressing

Primo: Capon Tortellini with capon consommé

Piatto di Mezzo: Housemade Chestnut Tagliatelle with capon offal ragú

Secondo: “Cassuela” Capon Stew with Savoy cabbage, onion, and garlic

Dolce: Caramel and Pine Nut Semifreddo with caramel sauce
